Mixed Vegetable Poriyal Recipe


Ingredients
20 French beans, finely chopped
2 carrots, finely chopped
salt to taste
1 tsp grated coconut
2 green chilies, slit
1 tsp mustard seeds
6-8 curry leaves
Preparation:

1. Preheat a 20 cm low on medium heat. Just before the visiotherm pointer reaches the first red mark, drop in the mustard seeds, cover and switch to low heat.

2. Once the seeds splatter, toss in the chopped vegetables, dripping wet. Add the green chilles, stir once and cover
.
3. Following the general guidelines for cooking vegetables, cook till done. Add salt and curry leaves.

4. Simmer for 1-2 minutes. Finally, sprinkle the grated coconut, cover and keep warm for 2-3minutes. Serve hot.
