carrot soup andhrastyle

Preparation:

1. Preheat a 20 cm High medium heat. Just before the visiotherm pointer reaches the first red mark, drop in the butter and onions.


2. Sauté the onions till light pink. Now add the carrots and the hot stock. Simmer for 10-15 minutes on low heat.

3. keeping aside 1-2 tbsp. of cooked carrot, blend the remaining in a mixer. Add salt, sugar, pepper and vinegar.

4. Simmer for a few minutes before turning off the heat. Garnish with fresh cream, coriander leaves and the reserved diced carrots.

5. If desired, add 4-5 chopped walnuts. Serve hot.

Ingredients
½ kg carrots, finely diced
1 onion, finely chopped
2 tsp pepper powder
1 tsp butter
½ tsp sugar
2 tsp vinegar
1 ltr hot vegetable/meat stock
Salt to taste
3 tsp chopped coriander leaves
3 tsp fresh cream
